“Do you like Green Eggs and Ham? I do not like them Sam-I-Am.” The kids are going to love this distinct breakfast recipe tribute to Dr. Theodore Geisel Seuss. Growing up everyone is familiar with this wonderful story. And, it immediately begs the question, “Can I have some Green Eggs and Ham?” Well, now you can- fried or scrambled. I hope you enjoy.

Truthfully, the presentation is, well… green. You’ve succeeded if the kids say “Gross!” It is, however, just food coloring and still a very delectable treat. Basic eggs and some thick cut deli ham are all you need for this fantasy breakfast recipe.
And, for those of you living under a rock since the 60’s this recipe is based on a children’s book by Dr. Seuss. It is the fourth best-selling children’s book of all time and famous all over the world.
“Sam-I-Am” is an annoying little character who insists that you try Green Eggs and Ham. The main response he receives is “I do not like green eggs and ham. I do not like them, Sam-I-Am.” Sam’s repeated attempts to offer his dish in different areas or locations meet with the same fate. Eventually, giving in to the persistence, we find out that, “I do so like green eggs and ham. Thank you. Thank you, Sam-I-Am.”
And, you too will love Green Eggs & Ham. I like to make this breakfast every March 2nd in celebration of Dr. Seuss’ birthday! Although, any morning it is a fun little surprise for the family. I might also suggest that you make this recipe for dinner and read the book before bed time. It adds a little creative interactivity to reading time.
This recipe has two options for you. A fried egg version, like in the book, or an easy scrambled egg version. I also recommend using a thick cut slice of ham that you can easily pick up from your local grocery store deli.
