Stuffed bell pepper recipes are always a lot of fun. The whole family will enjoy this Halloween spin on the theme. Let’s create a yummy beef and pork meat loaf style filling and stuff it into our “Jack-O-Lantern” bell peppers.
Ingredients
- 6-8 Bell Peppers
- 1/2 Cup, Freshly Grated Parmesan Cheese
- 1/2 lb. (8 Oz) Ground Beef
- 1/2 lb. (8 Oz) Ground Pork
- 1 Egg
- 1 Diced White Onion
- 1 Diced Tomato
- 4 Cloves, Minced Garlic
- 1 Cup Panko Bread Crumbs
- 1/2 Cup Chili Sauce
- 2 Tbsp Yellow Mustard
- 1 Tbsp Italian Seasoning
- 1/4 Cup Ketchup
- 3 Tbsp Worcestershire Sauce
- Kosher Salt
- Fresh Ground Pepper
Instructions
- Preheat your oven to 350 degrees.
- In a frying pan, sauté the onions and garlic until they are translucent and aromatic.
- In a mixing bowl, add the beef, pork, egg, panko, tomato, chili sauce, mustard, ketchup, Italian seasoning, Worcestershire sauce, sautéed onions and garlic. Add a pinch of salt and about 1/2 teaspoon of fresh ground pepper. Mix gently with your hands.
- Slice the top off of the peppers and remove the core and seeds. Now, be creative and cut your favorite "Jack-O-Lantern" faces into the peppers with a pairing knife.
- Stuff the beef/pork mixture into each pepper. Top with Parmesan and place the top loosely back on the peppers and place them into a baking dish. Bake for approximately one hour
